Lacking Protein

For my favorite day of the week, it sure is going by so slow.

Funny how I get excited when I’m setting goals and struggled to get my butt out the door to run today.

But I did it.

I didn’t die.  Actually it wasn’t that hard once I got going.  I didn’t even stop once.  I know it’s only 2 miles, but I’m quite surprised I still have a little endurance.  I felt like I could have kept going.

After I hit up the grocery store, bank & Starbucks.  Then spent some time in the kitchen prepping for the week.  And cleaning it.  Man, I can destroy that place in no time.

Mike requested a cold Italian pasta salad. 

I also boiled a few eggs & cut up a honey dew I had on hand.

It’s nice to have a meal and protein ready to go. 

I often don’t get enough protein, so I’ve been making an effort to have a little in each meal.  I’ve found I like eggs and they’re pretty cheap & easy to make.  A win in my non-cooking book.

My other favorites are chicken, quinoa, smoked almonds, smoked turkey & ham.  I also love extra lean ground beef & turkey every now & then.

I like black beans and hummus, but unfortunately my belly doesn’t.  Same goes with dairy products with the exception of cream cheese.  I have no idea why it doesn’t bother me, but I won’t complain since I love it!
