Bacon, feta & spinach stuffed chicken
Holy smokes Batman, I’m so stoked about crossing off everything done on my to do list today.

A little gift wrapping/traveling tip, put the bows on when you get to your destination so they stack easily. Also if you have glass items, put thin items between them so they don’t clink together. Or just blast country music to drown the noise out.
I even had time to give myself a manicure.

Check out this beautiful, colorful sunrise this morning, I had to snap a picture. Mr.Navy guy, Mike reminded me of old saying red sky in the morning, sailor take warning. He say’s it’s actually true.
I believe him, after looking outside this afternoon.
If you like feta & bacon you guys have to try Mike’s freaking amazing stuffed chicken. Here’s the recipe in his words:
Feta Stuffed Chicken Breast
Preheat oven 350 F
3 strips of bacon cooked and chopped (good quality, don’t be a cheap-butt)
2 big breasts, chicken (what did you think I meant?)
½ cup of crumbled cheese
2 tbs. olive oil
2 cloves crushed garlic
½ tsp. smoked paprika
1 hand full of fresh spinach, chopped
Cook bacon set aside (I’m not gonna tell you how to do it). Butterfly breasts. Mix all the rest in a bowl with the chopped bacon. Stuff all the cheese and bacon goodness in the chicken. Spray a pyrex dish with Pam or olive oil (I like to use a cast iron skillet, but most people don’t have one). Place in oven for about 25-30 minutes. Top with lemon garlic butter.
Lemon Garlic Butter
Butter or Margarine
Fresh cracked pepper
Melt it in a small sauce pan (Thin more lemon juice, Thick more butter)
